Health and wellness are becoming increasingly important to each and every Canadian. We know from nutritional science that we need to increase the consumption of fruits, vegetables, pulses and whole grains. The United Nations Food and Agriculture Organization estimates that there were 825 million undernourished people worldwide in 2000-2002, while at the same time there are 300 million obese adults worldwide. - Lycopene, a carotenoid responsible for the red colour in tomatoes and other fruits has long been known as a powerful antioxidant that decreases cancer and heart disease risk.
- Similarly, blueberries are known for their high levels of antioxidants and are a good source of fiber, vitamins A and C.
- Pulses contain many valuable nutrients including complex carbohydrates (fibre and resistant starch), protein, folate and minerals.
- As well, agricultural innovations in functional foods and nutraceuticals have assisted in the development of healthier products including trans fat free oils, compounds isolated from pulses that block starch digestion for weight and diabetes control and in the future even plant made vaccines.
